1/2 cup raw sunflower seeds
1/2 cup water
1 tablespoon apple cider vinegar
juice of 1/2 lemon (or an additional tablespoon apple cider vinegar)
1 teaspoon garlic powder
1 teaspoon onion powder
1 tablespoon parsley
1 dolop of vegenaise (optional)
Mix all ingredients in high speed blender or food processor.
Creamy Tomatillo Variation
To the mixture above add:
1 jalapeno (depending on how hot this is, you might want to remove the seeds)
2 fresh tomatillos
1 handful of fresh cilantro
Mix with blender until a creamy consistency develops.
This is delicious on salads, as a dip or on top of burritos.
I just made this (regular ranch version), and it turned out great! I didn't have any vegenaise, so I didn't add that. I think I will have to pick some up at the store. It's good without it, but I think the vegenaise will help with the consistency. (Mine's a little choppy because my blender isn't the best.) Thanks Jude! This totally solves my dressing problem.
